In 1972, Wyatt was hired as an assistant coach at the University of Mississippi (Ole Miss) under head coach Billy Kinard. He remained at Ole Miss for seven seasons, serving as the team's defensive coordinator from 1973 to 1978.
In 1979, Wyatt was hired as the head coach at the University of South Alabama. He led the Jaguars to a record of 56-40-4 in nine seasons, including two NCAA Division II playoff appearances.
